I live in Northern Ireland and want to become a Irish and History teacher in the Republic of Ireland and I would also like to study there. I know that a language is needed at GCSE level and I currently study Irish, does this count? Is there a certain university I need to go to?

Presumably you will need to do a degree in Irish and History, so yes, you will need a GCSE and A level in Irish. It doesn't matter which university you go to.
