I completed GCSE's and A-levels over 10yrs ago and no longer have my certificates. Do I need to order copies to provide as evidence to my uni? And how can I get them?

You need to ask the uni what they want you to produce. Some want to see everything, some don't ask for anything.

On each of your examiners web sites you will find information on how to obtain replacement certificates. You need to apply separately to each examiner and pay a fee for each year in which certificates were awarded. It isn't cheap so it may be worth having another search to see if you can find them.
