One summer internship said that If you have graduated, you will only be eligible if you are going on to do further study immediately after the placement.

It's company specific. Some allow final year students, some don't.
They'd know because you'd be highlighting to them that you have applied for a masters for example. And they'd likely talk about it at interview.

It depends on the company. I tried to apply to some internships in my third year stating that I would be applying for a masters but I got instant rejections from a few because their system had flagged me (because I stated I was in final year of undergrad) as ineligible. Not sure how to get around that, it required a lot of time chasing from me until eventually I gave up and found a different internship. Some might ask for proof of acceptance? But I do know a few friends who have done it or tried to so I don't think it's that uncommon - so I think just stating an intention to complete a masters is often enough for many companies, even if untrue.
