Not usually if they record it maybe but usually until you sign the dotted line

It can sometimes be in other situations in a legal sense but in this situation I don't think it will have much bearing on your right to interview for another job until you've signed a contract. Even once you start you normally have a probation period where you can leave with only 1 weeks notice or similar.
