Xylem is the main supporting structure in the plant stem and root. One advantage of a spiral arrangement in the stem is that it has greater resilience against the forces encountered above soil level, which are mainly horizontal in direction i.e. wind.
Thinking teleologically, I would imagine, knowing that xylem has the function of transport of water nd minerals, that this function is facilitated in some way by a spiral thickening arrangement -improved capillarity ?? - sorry can't think of a specific second advantage!
