At the moment I do a mix of weight training and cardio... I train every part of my body except my back. Should I start doing this, or will it take care of itself?

yes u should train your back. The posterior side of the body is much more important so don't neglect your back and hamstrings

    Yes always!

Pull ups, rows (inverted), back extensions, arch holds are great to work your back, upper to lower.

    Yes you should.
All of that suggested above and also do facepulls for upper back (for all the neglected stuff). Also do an exercise for serratus anterior and you'll be good
