I undertook volunteering at an organisation for roughly 5 months for one day a week. As it was such a long time ago, I am not entirely sure how many weeks I undertook. I may have missed about 4 weeks spread out within that period of time, essentially amounting to 4 solid months of one full day’s volunteering session.

I was wondering whether it is okay to “guestimate” how many hours I have volunteered while at the organisation or the number of people I have taken care on an average day in order to show more detail in my application?

Yes, a guesstimate is fine of hours and/or people helped.
