Hi, i was wondering if the Physics department has an open door policy?
What do you mean? As in walking into professors' offices? I highly doubt any department has that and it would be up to the professor with the exception of researchers (including their dissertation students) and office hours for modules they teach.

I dont think sheffield does, i know UCL/Warwick/Imperial do.

What typically happens is that because all staff and students email is done through google services you can see each other's calendars and book an appointment with them. Depending on the settings you just see their entries as "busy" or you get their actual details but you can see when they are free and invite them to your google calendar event by name (your contact list is automatically linked to everyone in the uni)
