For example, it says that the maximum mark for writing is 60 with 90 UMS marks, yet an A* at 49 marks is worth 81 UMS marks??? so does that mean if you got say 55 marks you would get more UMS marks, because the maximum amount of UMS marks is 300 including the 'maximum' UMS marks.

I'm not clear what you are asking. Each paper is marked and the raw mark is turned into UMS [the scale will be different this year] and then those UMS are added up. The final total UMS gives your overall grade.
