Should 'kanji' have a capital 'K' in my personal statement?

I wouldn't because it's a noun, unless obviously it's the first word in a sentence lol.

Unless of course you start the sentence with it.

Please don't tell me you're putting manga in your personal statement, I don't know about everyone but I know that my teachers hate references to anime and manga and it does not go down well
