Is an econ degree with finance considered weaker than a economics degree to employers. Could it hinder the chances of getting into a competitive job/firm or is valued exactly the same?

Different economics degrees will cover things in different amounts of detail so you may have degrees that have more finance but are still called economics or you may have degrees called economics and finance. What it comes down to is what you have actually studied vs what the degree is called. Pick a degree that interests you and that you will do well in.

I very much doubt the specifics of your degree title matters to employers. I have a 2:1 Economics degree but I have been able to easily explain that I tailored my degree to accounting/finance optional units because these are areas I'm interested in. Even so, a lot of employers in finance/accounting don't even specify that you need finance-related degree, they just would like that you have any degree that is highly analytical and mathematical. The Big Four don't even have subject requirements for a lot of their openings.

They care much more about what grade you get. Getting a 2:1 is very important. Getting some experience in a small finance role in summer breaks is also helpful.
