Because a variety of subjects will prepare you for it, from science to arts. It's about logical and analytical thinking (Science) as well as debate (Humanities). Most unis just want you to do 'respected' subjects, ones that are genuinely challenging. Though many would also recommend doing at least one essay subject so as to maintain that skill, as obviously you will need it.
