They do they do they do !!

Not all stores set up there alarm systems to detect unscanned barcodes, but many do !
There's literally no way to get an alarm for unscanned barcodes. Barcodes are basically just printed images. There's no way to scan them through a bag and barcodes aren't unique for every single item but each different product. So you wouldn't be even able to know if this specific one was scanned.

What alarm systems can find are sensors. The big bulky ones like on drinks or some clothes. Those get taken off at the till. Or small plastic ones with barcodes printed on them that you can usually find on DVDs and electronics. The sensors inside of those get deactivated at the till.

No alarms can detect unscanned barcodes! Only things they can detect are sensors.

How do you magnetise some ink on a bit of card?

I think what you mean is that the scanners can detect the sensor underneath a barcode.
What sensor under a barcode ?

If I was this unintelligent and stubborn I too would be a fan of the anon feature, they need an electronic tag to be triggered, period.

OP is a troll - he's always posting about barcode scanners, most recently, a fetish for them.
