My A levels are Politics and Sociology , should I take Psychology which is more respected by universities, but i'm not sure how well i will do in it. Any one here take it and can say what they think of the subject? I get Bs in gcse science.

Or law, i feel like i will love it and get a good grade it's just not as well respected. Say if i do take politics law and sociology will i get into Uni? I want to go to Manchester x

I dont believe law is any less respected than any of your other subjects. None of them are facilitating in any event.

Does Manchester state they dont respect a law A level? Not many unis have any view on it at all.

Unis require 3 grades, so it makes sense you do 3 subjects where you can get the best grades and that will probably mean the ones you enjoy the most, Unless it specifically warns against on the website, then Psychology is not superior and the fact you are uncertain is even more bonkers for you to consider taking it.

Manchester have no prejudice against law.
Take Law if that's what you prefer,

Psychology isnt really more respected than Law, so take law as you enjoy it more and would therefore probably do better in it
