I would advise doing some other essay subjects to complement English. This will strengthen an application to study English or a similar discipline in the future.
Why not consider doing a second facilitating subject like History? I do both History and Literature and they really compliment each other.

Spanish is none of those subjects, so it's not a STEM course. It is, as with any non-native language course, well regarded as good academic preparation for university.
