    You don't do GCSEs in Scotland- National 3/4/5 is the Scottish equivalents, with National 5 being the most challenging of those 3 levels and the one that most S4 pupils will generally take for a subject.
    And yes, you do get to pick the subjects you do for Nat 5 in S4, although some subjects may be mandatory or not available in your school. You will likely have to pick from columns in your subject options, so some subject combinations may not be possible (just the way the columns work out), however each school has its own options form (and these usually change each year too), so I can't really say much more about that.
    Most schools will have you do between 6 and 8 subjects during S4, including maths and English.

    You do get to choose what subjects you'll study in S4, at least to some extent. Although as has been pointed out above, GCSEs aren't really a thing in Scotland, instead most S4 students will sit National 5 qualifications (think of National 5 as roughly equivalent to the Higher or 'Normal' GCSE, and National 4 as equivalent to the Foundation GCSE), it is at the discretion of each school how much choice they give their pupils, although the vast majority will make you take Maths and English, and some schools will base their columns on subject groups, ensuring you take a wide range - eg. at my old school, pupils had to pick (unless they got the approval of their Year Head to do 2 subjects of the same 'type') one of each

    * Maths
    * English
    * Modern Foreign Language
    * Social Sciences/Subjects (Modern Studies, Geography, History, Business)
    * Science (Physics, Biology, Chemistry)
    * Technologies (Computing, Admin & IT, Graphic Communication)
    * Expressive Arts/Physical Subjects (PE, Art, Dance, Music)

    Some good info there from Perthite...Just so you are not worrying unnecessarily, equally, some schools will allow you to do (usually alongside maths and English) 4 STEM subjects or 3 languages or lots of arts based subjects- as Perthite said it's up to the individual school in how they do it...If you're wanting to know more, asking your own school about S4 subject choices is probably your best bet
