When NEAs get sent off to be moderated, to what depth do the moderators analyse it? Like, do they essentially mark it all over again? Or do they mostly just verify that the teacher's marking is correct, e.g. they don't necessarily read every single sentence you've written?
And approximately what proportion of NEAs get sent off to be moderated? I'm only in (or was only in) a class of two, so I'm guessing they'll want to check at least one of ours, right?
And lastly, when does moderation generally take place? I created a website for mine, and I'm just wondering at what point it's safe to stop worrying about the server's uptime and whatnot...

Usually they take a sample of your class, and if a certain percentage are incorrectly marked actions are taken.
