This is what happens when men have oneitis/ are in a state of scarcity: they become desperate, paranoid, insecure, and generally under the thumbs of women. If you were texting 2+ other girls at the same time, you wouldn't notice her absence either. So with that in mind, we can reasonably surmise that she has a few guys on the go and you were just another option. That's how it works I'm afraid.
