if you get enough points to get into the uni course you want to after AS levels, can you just drop out then and take a gap year, then apply to uni?!

Not for most places, cos they'll usually say something like "xxx points from 3 A Levels".

I'm a resit student and was redoing the whole a level but only managed to finish the AS parts and my uni still accepted me.

And with AS levels you can always go back and finish them, i have a C in English Lit that i am considering going back and converting into an A2 if my place is deferred because of health stuff.

No. You usually need at least one or 2 A-Levels, combined with other AS-Levels. For instance, the course I applied to do required 2 A levels at B grade, plus another 100 UCAS points.
