Does anybody know how to quantify a 7 point Likert scale and work out the mean for several variables? I have answers such as "strongly agree", "moderately agree" etc. for 6 or 7 variables but I'm not sure how to turn these answers into numbers and quantify them.

Well, it rather depends upon what your data represents and what you want to do with it! The Wikipedia article on "Likert Scale" is quite illuminating about the disagreements here!

Being more specific, it boils down to whether your responses can be claimed to be interval data or whether they need to be treated as ordered categorical data...or worse...
