I am applying to
Cambridge- geography
Nottingham- geography
Leeds- geography and economics
Bristol- geography
Bath- international development with economics

At the moment my personal statement is only geography related because I am focussing it for Cambridge. Should I mention economics?

It's not advisable to apply for different courses like that, as you can't tailor your PS to both requirements. It's best if you choose either one or the other

Do you think I should apply for all geography and add economics once I've joined if I want because nearly all the courses have geography in common

I would recommend contacting Leeds and Bath and explaining that their courses are unique and ask if you're less likely to get an offer if you apply with a straight geography PS.
