I want to apply to a top uni, however my gcse results aren't the best. 1 A 6 B and 7 C. I should hopefully get AAA at a level. Do I have a chance in getting into a high uni such as Durham. Obviously oxbridge is out of the question

Yes, Cambridge is also doable, providing you get 85%+ in your AS exams at least and do well in any admissions tests and interviews.

Nope, they don't care as much about GCSEs, a lot more emphasis is put on AS Level marks, admissions tests and interviews.

Most Unis will only require essential GCSEs like Maths and/or English. However, most will score your top 8 (or 5 or whatever) GCSEs as part of their screening. It will only be a small % of your overall score so if you have good AS/A level and a sensible PS that can often negate a slightly weaker GCSE profile. Btw, if you want to raise your Maths or English GCSE grade by retaking in Year 12 or 13 that is usually do-able (ask your school) and Unis will not mark you down for this - just make sure you add the retakes to your application.
