Just wondering if anybody knows who I could have as a second reference? I’m not sure as I have been out of employment for over a year now and left school over 8 years ago.

The best thing to do would be to contact your university to find out their second reference requirements. Your second reference is not sent with your UCAS application so you probably won't need to provide it until after interview or after you have received a conditional offer. The university should tell you exactly who they will accept as a reference.
