I want to do some kind of science course (which I know are pretty competitive) at a top university - maybe even Oxbridge - so I was wondering, would it hinder my application much if I had little/no work experience? Assuming I get good A Levels and have a good personal statement; I already have pretty good GCSEs.

No. They do not expect or require work experience, relevant or not.
