When a uni webpage says grade requirements are AAA-AAB, what does this mean??? which one is it, is it dependent on anything else in your application or the number of applicants or what??

Yes, some universities will have a normal offer (AAA), but if you meet the contextual offer, you will get the lower requirements (AAB). Others may give you the lower offer if you have a really good personal statement, great grades, or have completed an EPQ, so it can be dependant on your application based on the uni.
