is it wise to attend an open day before making a firm and insurance choice or do you normally just choose without getting to know the uni environment physically?

It's up to the person, no-one can say what you should do. If you feel you don't really know a uni that well then by all means go and visit before making your decision. To some the physical environment is an important factor, others make their decision primarily on rankings and academic data.

Ohk I pretty much know which one will be better for me but thought maybe a visit is required, and how long do I have to respond to an offer

It says on the UCAS website or phone up might be easier.
