    So I'm in Year 13 and I contacted a university asking if I could drop one of the 3 A-levels I'm currently studying because I've already got one and it would leave me with 3 A-levels overall anyway. They said that students 'are not disadvantaged if they take an A-level early'. Does this mean that they'll count the early A-level as part of my offer, or does it mean that when students happen to take an A-level early and still do 3 A-levels in Year 13, that's not a disadvantage?

    It means that they would count an A level taken early towards meeting yout entry requirements. As long as you still meet any subject specific requirements it would mean that IF they made you a conditional offer your existing result could be used to satisfy that offer.
    It does not mean other universities would make the same decision.
