    I’m starting my a levels and I’m doing business and economics, and I heard some unis don’t recognise these as separate subjects! However I will be dropping one after this year

    A lot of universities prefer students not to take two similar subjects, and most of them list business studies and economics as examples (LSE/Warwick for example.) If you drop one of them next year it doesn't matter. None of them are stupid subjects at all, you could easily get into law with those subjects, as long as you have the grades.

    Do you mean it doesn’t matter as in the university won’t care about the 4th subject??

    These are AS Levels, so it's not that big of a deal if you drop either Economics or Business next year so that you have three different A-Levels (some universities class them at the same) but in AS Level it doesn't matter as you're doing four and will only need three for university.
