I just sent mine off for English so I've got some advice. Book wise, quality over quantity. I'd say go for 5/6 max and really explain what interested you - the literary period, the themes, the style of writing etc. Make sure to get poetry, prose and plays in somewhere - and some element of language. They need to know you can be self motivated because there will be lots of independent reading so demonstrate that in some way. Extra curricular wise, it's good to have something related to the subject like writing for the school paper, volunteering in a library, public speaking, performance etc.

    Hope this helps!
