Once I pay and send my application does it mean that I have no chance at all in making adjustments to for example my personal statement?

This literally happened to me today, I sent off my UCAS application yesterday (paid for it) and realised today in school I made a small mistake on one word, fortunately the school didn't send it off yet and so they sent it back to me to make that adjustment, I didn't have to pay again and it's with the school again.

No it just sends it to someone in your school eg. referee, and if they find anything that needs changing they can send it back to you for you to fix whatever mistake there was. Once the application has actually been submitted to UCAS (you know because you get an email saying so) then you can't change it.
