We started A-levels about a month ago, and I chose Chemistry, Biology, and Maths - each of which I chose since I enjoyed and I got A's in these, so I felt more comfortable in taking these subjects. However, I'm starting to lose interest in Maths, and am finding certain parts difficult to grasp and understand. Plus - I end up doing SOOO much maths homework and catching up that it is affecting my other subjects (not too badly, but significantly). I spoke to the physics teacher, who says that he is more than happy to let me take on physics instead of maths, as I got a B in physics, and enjoyed it too. Should I change, or should I just stick to maths - does anybody do physics? How is it?

Not sure it will be as easy as that. The school census took place last week so you are now registered on the A level maths course. There are funding implications if you change now. You need to ask your provider whether they will allow this.
