I'm assuming you're not still at sixth form/college?
    Are you fluent?
If you're fluent then what you'll need to do is find an exam centre who will take you as a private candidate. You may be required to pay for the exams. The deadline for summer exams I believe is some time in February, however many schools will have earlier deadlines so they have time to sort everything out (my school's ridiculously was last week!)
You'll also need to find the specification for the exam board that you end up on, and check you are capable of all the things on there. I'm not familiar with the Italian course, but if there's any controlled assessment you'll need to liase with your exam centre to get that completed in time.
If you're not fluent it will be more difficult, as you'll need to learn the course in detail as well. There may be online courses you can pay to complete, or you could get a tutor. You will still need to find an exam centre sson regardless (assuming you want to take it in summer 2018).
