I'm currently preparing for my Piano Grade 8 exam for November, as well as my Viola Exam in early 2018. This means that other than my Piano diploma, I won't have anything to do (except of course learning new songs on my current instruments, which I love doing). I also did Grade 6 Music theory last year.

I'd like to therefore start to learn the Guitar, because there are so many songs I would like to be able to play on it that I adore (like Chasing Cars ). This won't affect my decision, but I was wondering, will my experience in playing viola and being able to read between Clefs mean I should start playing at a higher grade (grade 3 is the highest i can start i think) or is it a difficult instrument to learn?

Hiya! I also play multiple instruments but guitar is my first - I’d honestly suggest learning a bit on your own, maybe through YouTube, before you commence lessons - playing other instruments will definitely help you grasp it quicker, but it’s quite difficult to pick up!!!
