    Hello,
    Why are fibrous proteins, that have a secondary structure with either alpha helix or beta pleated sheets, insoluble in water although they have a slightly negative carboxyl end and slightly positive amine group. While globular proteins are soluble in water or can form colloids? Plus please define what we mean by colloids.
