I was wondering when we're talking about our work experience during the interviews would it seem a breach of patient confidentiality if I were to talk about an experience with a certain patient?

I obviously won't say the patients name- merely talk about the discussion I had with the patient and what illness she had, and how it impacted her, etc

I guess what I'm saying is; would they view it negatively if I talk about a specific patient?

Ofc not, they want you to give specific examples. As long as you don't mention details about the person that could help identify them it's fine.
