    What features do globular proteins have that make them good enzymes??

    • Hydrophobic groups point into centre of molecule away from water
    • Only hydrophilic groups are exposed outside the molecule so globular proteins are soluble
    • Globular proteins have roles in metabolic reactions:
      • Enzymes - catalyse metabolic reactions
      • Haemoglobin - binds to oxygen to transport it around body

    Enzymes need to have a specific shaped active site which is made during the Tertiary folding stages of protein synthesis. The interactions created by hydrophobic/hydrophilic groups as well as the bonding from sulphur containing or ionic bonds helps to create the specific shape. Fibrous proteins aren't able to create an active site as they focus on being used for structural purposes (Long and Strong) e.g. Collagen
