I'm a guy who is dating a girl 7 years older than me (I'm 22, she's 29). I live with my parents.
In the past, I've dated a 23 year old girl when I was 20 and my parents were fine with it. However, this is a slightly bigger age gap, and I'm worried about how my parents will react. Do you think it is likely they'll make a big deal of it? Should I trim a couple of years off of her age, when they ask?

If it gets serious, they'll eventually know. Nothing wrong with that age gap, just be honest with them.

If your parents were alright with a 23 year old, it may not be that bad as you're imagining it to be if you tell them she's 29 years old. However, tell the parent of yours that you think will be more accepting first so if that person joins your side when you tell your other parent, it's game over for them.
