All anyone can tell you will be in terms of averages and statistics. At the end of the day, you have to live with the decision. (e.g. I could tell you with X degree, 0.01% earn £1m+, 1% earn £100k+, 10% earn £50k+, 50% earn £30k+, 90% earn £15k+, but everyone's circumstances are different and you could be the one earning £15k even though 90% earn more)

I would go for the one which interests you more, and hope that the opportunity comes along when you are applying for jobs!

Finally, if I were to look at this myself, pragmatically I would go for environmental sciences.
