If I wish to study Politics in Uni (I want to become an ambassador), should I take Global Politics or History in IB?

Ambassadors are senior members of the Civil Service, it could take decades to reach that level. The Civil Service Fast Steam (which is what you'd apply for if you wanted to work in the Diplomatic Service) does not care what degree you take, History, Politics, Languages, English - heck, even Media Studies would be absolutely fine. With that in mind, you may as well study what you enjoy.

Re which IB to take, keep in mind that you can study politics at uni without having taken it at school, you can't with history.
