Ambassadors are senior members of the Civil Service, it could take decades to reach that level. The Civil Service Fast Steam (which is what you'd apply for if you wanted to work in the Diplomatic Service) does not care what degree you take, History, Politics, Languages, English - heck, even Media Studies would be absolutely fine. With that in mind, you may as well study what you enjoy.

Re which IB to take, keep in mind that you can study politics at uni without having taken it at school, you can't with history.

Politics is a course with no set requirements in order to study it at Uni. So it doesn't really matter and its probably more a matter of which one you're better at and which one you would rather like to study.

Personally, I would go with History. First of all, Global Politics is a rather new addition to the IB, so there's a chance that it will not be as well recognised by the university. History is an essay-based subject, so it preapares you for the essays you will write at uni, and also you'll learn the skills to assimilate and condense information quickly. A small number of unis actually mention History as a requirement.
