Does being a personal carer of a family member qualify as experience, i have been a carer for the past 7 years, which was recognised by my high school in 2015. I have no other experience except for workim charity shops, retail and a local pharmacy. Do i still have a chance ?

I think this might be in the wrong place. Regardless, when applying for medicine at least, most universities do not consider personal acts of care work to be valid work experience (although you can talk and reflect on it in interview). You might have a chance with the other forms of experience you list, but I don't know anything about the paramedic application process to give you a specific answer.

Do the university websites not list valid forms of work experience?

For medicine (you have posted here after all), you can always put your personal experience in the personal statement. Your "other experience" is absolutely fine though - make sure you mention these!

For paramedic science, that's more than enough experience
