Interpretation help for UV/VIS spec on myoglobin

I have a set of results where we extracted myoglobin from hamburger and oxidised and reduced it then ran UV/VIS spectroscopy on it but im struggling to understand why i have the results i do or what they mean. Any help or useful links would be appreciated. Thank you!
