I completed an assessment for the university of Manchester's English literature course and have waited 3 weeks for a response but still heard nothing! I have had offers from all other UCAS choices, could the delayed response mean anything? Or does anyone have a rough guess from when I might hear back? I know it's a course which is in high demand so I suppose there will be a lot of applications for them to get through however the suspense is killing me... Maybe I'm just being impatient

Three weeks is not that long in admissions terms- admissions staff also have other duties, teaching, research etc, which may have caused a delay. It may also be that you are a "borderline" applicant, and they are waiting to see who accepts/declines their offers to decide whether or not to offer you a place. Do they have other assessment days? If there are more to come, they may be waiting to see how applicants perform in those as well.

You've got your other offers and you've done all you can, so I would try to put it to the back of your mind and focus on your A-levels (easier said than done!)
