when doing the hess law cycle, where do the elements below the equation come from, how do you work them out and also how do you know what direction the arrows are coming from and where from?

Depends what enthalpy data you're given.
if it's enthalpy of formation then you write down the constituent elements below the reaction equation
if it's enthalpy of combustion you write down CO2 and H20.

there's some videos on youtube which explain these concepts in a simple way , i used them and they helped out alot
