    if the melting point of something is 200C then what does C mean in this context. I'm guessing it means degrees celsius but I want to make sure. Is this correct?

    Yes it is degrees Celsius

    It is a unit for temperature, it is degrees Celsius, an alternative to Fahrenheit. So you are right.
