I left college in 2016 with three A levels

I want to improve the grades to apply to higher courses but does anyone know if it is possible to retake exams two/three years later?

I wasn't sure if there is a limit on which I can leave it between retakes and if there is a time limit, how long is It?

Yes, find an exam centre and request to sit the exam there.

There is no time limit for uk A levels as long as the specification is still available for examination. That will be you biggest problem as many of the subjects have been replaced by new specifications and so resits of the exams you took may no longer be possible. Some subjects are not available at all. Some subjects have their last resit opportunity in summer 2018 exams, entries for them have probably already been done so it will be harder to find an exam centre that will accept you and it will be more expensive. A few subjects, e.g. Maths, have their last resit opportunity in summer 2019. What subjects/examiner do you want to do? Have you already agreed an exam centre where you wil take them?

as above, it depends on the course and spec.
I'm old spec maths, on my second year and I've got my last chance to resit next year any module I've taken by this year.
you may be out of luck as the deadline has past for this year (unless you pay penalties) and most have started new spec already. maths is one of the last.

What subjects are you hoping to re-sit?
