I am writing about how lithology influences rates of erosion at the coast. Could I include the permeability of the rock or does this not fit under lithology?

I would say you could include the permeability, because the lithology refers to the physical properties of the rock, so it could be very important, and to me, it does go together.

Surprisingly, I was doing this question today.

Talk about soft and hard engineering.
    Weathering.
    Sub-aerial processes.
    Seasons.
    Geology.
