when you get your gcse results, you get a separate grade for lit and lan, but when employers ask, do you have to give an overall grade or just give whichever one you got the highest in?

My English teacher told me that it is the highest one that is counted/asked for, either one can be chosen basically

You give both as they are completely separate GCSEs.

For the school's league table it is your better grade that counts but for you they are both GCSEs you need to declare although employers are more likely to care about English Language.

Yeah I agree with compost, you give both. They are different GCSEs. Normally English language is the one that they are after and that’s the one you must pass or you have to re take.
