mmmmm I lurve halloumi too! I usually put in on a roll with salad but this is very nice too;


DOUBLE POTATO AND HALLOUMI BAKE- NIGELLA LAWSON

Serves 2-3
Ingredients
· 1 large sweet potato, the orange-fleshed American variety
· 1 large Desiree potato or other red/firm potato
· 1 red onion
· 1 yellow pepper
· 1 red pepper
· half a head of garlic
· 4 tbspns olive oil
· black pepper
· 125g halloumi cheese, sliced as thinly as you can
· Oven proof baking dish, 25 x 15cm
1.Preheat the oven to 200C/ gas mark 6.
2.Cut the sweet potato into rough 4 cm cubes and the Desiree slightly smaller (2.5cm) as the sweet potato will cook more quickly. Halve the red onion then cut the half into 4-6 segments, discarding any tough outer skin. De-seed the peppers and cut into 2.5 cm squares, and separate the cloves of garlic.
3.Put everything into a large roasting tin or whatever you want to use (it should be big, otherwise use two dishes) and, using your hands, give the vegetables a good coating of olive oil. Season with black pepper, but no salt as the cheese will make it salty (and anyway, the salt will make water leech out).
4.Cook for 45 minutes, by which time the vegetables should be cooked through and here and there tinged with brown.
5.You'll need to turn the oven up to maximum, or light the grill for the endgame: so place the thinly sliced cheese on top of the bake, and put it back in the very hot oven or under the grill until the cheese has melted and turned slightly brown on top, about 5-10 minutes. Serve straight out of the roasting tin.

Grilled and served with grilled tomatoes and fresh crusty granary bread, or with a ton of salad leaves, or steamed vegetables?

Cubed, fried and served on risotto, or stirred into a pearl barley and vegetable casserole?

I sometimes cut it into cubes and put it in a bolagnaise or sauce to go with pasta, that's pretty yummy. Goes nicely with cous cous as well.

It's really nice if you put it on kebab sticks, with any other kebab-type-vegetables you like, and grilled on the barbecue. Mmmm :p:

Mmm Halloumi. Was rather addicted to it before I moved here, then got all bummed out cos I couldn't find any here. But I found some and the love is back!
I like to eat it as such

- fry some slices and then cut into bits
- fresh baby leaf spinach in a bowl
- baby plum tomatoes quartered
- fry and caramelise some shallots

whack it all in a bowl and drizzle some balsamic vinegar over. YUM!

I'm addicted to fresh spinach too but I can't bloomin find any here :frown:

Mmm Halloumi. Was rather addicted to it before I moved here, then got all bummed out cos I couldn't find any here. But I found some and the love is back!

my mum gets bags of spinach from tesco and we make cannelonni(?) with it

i think its quite like feta


grill it on some sausages :biggrin:

or cover in flour and fry it, then have with pasta

have it in pitta bread with peppers/chilli and chicken

make a pizza with it :biggrin:

:frown: oh, id of sent you some as i have to send a dvd to morroco soon, but i feel as its spinach it would be mouldy by the time you got it lol

I don't. Feta isn't salty, Halloumi very much is. Feta is very strong-tasting, and I cannot imagine actually eating it. Putting it on things is one thing, but Feta is rather... pungent. Halloumi is rubbery, Feta is crumbly. Halloumi >> Feta!

Best grilled, of course.

yeah I meant I've only ever fried it and it doesn't melt, so does it melt when you put it in the oven? That's really strange!
