I am currently deciding which A- levels i want to take. However, I am keeping my choice open for studying economics or veterinary medicine. I have decided on maths , further maths, biology and chemistry or maths, economics , biology or chemistry. Which choice would be better or is there a better option ? And would this be difficult or manageable to do?

Honestly both are fine - but if you're going to do further maths, make sure you're really, REALLY confident with maths. An economics A level isn't needed for an economics degree - but that doesn't mean to say you shouldn't take it if it's a subject you're really interested in.
