If you want to study PPE, then your personal statement will mainly focus on that subject. Sport/music/art isn't relevant at all. Work experience is only really relevant if it's closely related to the degree, and PPE isn't a vocational course.

To make a good PS you'll need to do some reading relating to your subject. You could also see if there are any open lecture days at your local university on relevant subjects. MPs will often host visits for school groups at parliament- your teacher might organize a trip, or you could ask them. You could also ask to shadow your MP, or a local Councillor for a few days. It's all about showing a super-curricular interest in your subject, rather than a random interest that's unrelated to what you want to study.

If you want a traditional extracurricular type activity for other reasons, debating would probably be the ideal one for this subject.
